Chocolate & Chaga Banana Pancakes with Me-Omega Maple Syrup


Okay guys, I have a confession to make. I yesterday up this morning with the wildest craving for something sweet and chocolatey.


While I procrastinated getting out from under the cozy covers, pondering what I could make to satisfy my sweet tooth, I was hit with a moment of inspiration! It would finally be the day that I finally tried my hand at banana pancakes.


With a roaring stomach and a craving that just wouldn't quit, I hopped out of bed and made my way to the kitchen to craft my chocolatey creation. Let me tell you.... I'm not typically one to indulge in the sweets (I'm a salty kinda gal, for sure). But WOW - did these superfood pancakes hit the spot. In fact, I loved it SO much, that made it again this morning!


Rich in omega 3, dietary fibre, and a great source of protein, this sweet treat will hit the spot, and keep you satisfied all morning long!






CHOCOLATE CHIP & CHAGA BANANA PANCAKE


Prep Time: 5 minutes Cook Time: 10 minutes

Total Time: 15 minutes Serves 1


INGREDIENTS:


1 ripe banana, peeled and broken into pieces

1 large free-run egg (organic, if you can get it!!)

1 tsp organic chaga mushroom powder

2 tsp vegan protein powder (optional)

1/4 tsp cinnamon

1/2 tsp alcohol-free vanilla extract

1 tbsp dairy-free chocolate chips or cacao nibs (2 if you're feeling naughty)

1/2 tbsp butter, ghee, or virgin coconut oil


Possible toppings:


Me-Omega Maple Syrup (see recipe below)

1/4 cup fresh or frozen berries (I used frozen raspberries and DAMN were they delicious)

1 tbsp hemp hearts

1 tsp unsweetened shredded coconut

1 tbsp nut butter

1 tbsp chopped nuts


WHAT TO DO:


In a medium-sized mixing bowl, add the banana, and mash with a fork. Crack the egg into the bowl, and mash into the banana. Using your fork, whisk until well-incorporated. Add the protein powder, chaga powder, cinnamon, and vanilla. Mix well. Add the chocolate chips, and stir until evenly distributed.


Next, turn on the stovetop to medium heat. Melt cooking fat of choice. Spread with a spatula to make sure the entire pan is coated with oil. Using a small ladle, spoon your pancakes into the pan (a single recipe makes about 3 medium-sized pancakes). Cook for about 5 minutes, or until the bottom is lightly browned. Flip with a spatula, and cook for another 3-5 minutes, or until golden brown.


While the pancakes are cooking, make your Me-Omega Maple Syrup.


ME-OH-MEGA MAPLE SYRUP


INGREDENTS:


1 tbsp organic, natural Canadian maple syrup

1 tbsp cold-pressed organic flaxseed oil


WHAT TO DO:


In a small mason jar or bowl, mix equal parts flaxseed oil and natural maple syrup. Mix well, and drizzle on pancakes. Delish!
